Mr. Mojica is responsible for the food service and clinical operations at the University of North Carolina Hospitals. His team consists of 30 Registered Dietitians and more than 300 hourly team members that are responsible for the care and feeding of patients and customers in the 800 bed acute care hospital system. His 15 years of contract foodservice experience gave him the opportunity to manage operations in a variety of acute and long-term care settings. Patient and guest feeding experiences have ranged from a 300 bed assisted living/nursing facility to a 900 bed trauma hospital. Mr. Mojica was chosen to manage the medals plaza and luxury suites at the 2002 Winter Olympics in Salt Lake City where he and his team served 10,000 retail customers daily and various celebrities and world leaders. Additional degrees in Clinical Dietetics and Culinary arts have assisted Mr. Mojica and his team to see foodservice from the clinical, operations and culinary perspectives.
